SIMPLE SERVE NO BAKE CHEESE CAKE



FILLING

8 OZ CREAM CHEESE (SOFTENED)

1/2 C CREAM

1/2 CUP POWEDERED SUGAR

1 VANILLA BEAN (SCRAPED)

1/2 CUP FLOUR

1/4-1/3 C DIRTY DIANA OR RAMBLIN RASPBERRY JAM.

CRUST

2 CUPS PRETZEL STICKS

3 TBSP BUTTER

1/4 C BROWN SUGAR

1/4 C WHITE SUGAR

PREHEAT OVEN TO 375.  

MELT BUTTER IN 9X13 PAN.  SPRINKLE SUGAR EVENLY IN BOTTOM OF PAN AND THEN LAYER PRETZELS ON TOP OF SUGAR.  BAKE FOR 12-15 MINUTES OR UNTIL CRUNCHY.  REMOVE FROM OVEN AND LET COOL.

BLEND CREAM CHEESE, POWDERED SUGAR, AND VANILLA BEAN IN BLENDER UNTIL SMOOTH AND CREAMY.  ADD CREAM AND BEAT ON HIGH SPEED UNTIL MIXTURE IS FLUFFY AND THEN MIX IN FLOUR.  ADD JAM TO MIXTURE AND SLOWLY BLEND IN WITH SPATULA (IF YOU WANT SWIRLS), OR MIX WITH PADDLE IF YOU WANT FLAVOR ALL THE WAY THROUGH.  CHILL FOR AT LEAST 1 1/2 HOURS BEFORE SERVING.

BREAK UP PRETZEL CRUST AND PULSE IN FOOD PROCESSOR UNITL IT LOOKS LIKE SMALL CRUMBLES, OR PUT IN A ZIPLOC AND SMASH INTO CRUMBS.

SERVE INDIVUALLY IN SMALL CRUETS, ICE CREAM DISHES, ESPRESSO CUPS, WHATEVER YOU HAVE!  SPRINKLE THE CRUST CRUMBS OVER THE TOP .... THE SWEET AND SALTY IS A WONDERFUL CONTRAST TO THE SWEET CHEESECAKE, AND OUR NO SUGAR ADDED JAMS MAKE RICH CHEESECAKE LESS OF A SIN!  XOXO
